You don't have to celebrate Hanukkah to love latkes. These delicious potato pancakes are a staple of the Hanukkah table, but did you know their origin is from cheese? PBS food blogger and culinary anthropologist Tori Avey shares that potato latkes actually descend from Italian ricotta pancakes, called cassola. The potato latke developed later in Eastern Europe after a series of crop failures led to mass potato plantings.
