Poaching is a moist-heat technique everyone has heard of but many fail to reach, since cooking must be managed carefully (typically between 160-180 degrees Fahrenheit). This method is often used for eggs, chicken, fish and fruit to lock in moisture and preserve the texture of more delicate ingredients.
